ENISHI hails from Kobe, Japan and is well known for receiving the “Michelin Bib Gourmand” award. They hope to provide customers with the enjoyment of Japanese ramen in “an atmosphere which conjures images of dining in a high-class traditional Japanese restaurant” and they have certainly achieved that!
Stepping in, the restaurant, whilst small with only around 9 counter seats, appeared cosy and inviting. Helmed by their very own Japanese chef who worked tirelessly with skill and precision, served piping hot bowls of ramen that looked exceptionally well-crafted.
神戸発のラーメン店 ENISHI。ラーメン店としては珍しく、ミシュランビブグルマンを獲得したことで有名なお店です。伝統的で格式高い日本料理屋を思わせるような空間で、ラーメンを食べることができます。
なかにはいると、カウンター9席ほどしかありません。おしゃれで特別感がある雰囲気。確かな技術と正確さを兼ね備える職人が仕上げる美しいラーメン。さまざまな点において、日本の匠の技とこだわりを感じました。

I did not wait long before being seated and despite the menu being simple with only 2 main dishes, I had a hard time choosing. Both looked so good! I decided to order a mixture of both dishes to share with my company. So glad that I had a buddy!!
私が伺ったときは満席のようでしたが、さほど長い時間もかからずに席に座れました。メニューは「DAN-DAN Noodle」と「DASHI Noodle」の2つだけ。にもかかわらず、どちらも魅力的で選ぶのに時間がかかっちゃいました。迷った挙げ句、いっしょに来ていた仲間と別々のメニューを頼み、シェアしてどちらも食べることに。ひとりで来てなくてよかった!!

After our orders were taken swiftly, you would notice something peculiar being served to your table if you ordered the “DAN-DAN Noodle”, which I did. A set of vinegar based condiments is served to your table; which includes “Spicy Vinegar”, “Orange Vinegar”, and “Kelp Vinegar”. We were highly intrigued by the “Orange Vinegar” and immediately poured a small bit to try. Our taste-buds first failed us as we could not understand the complexity of succeeding flavours that bombarded the mouth. But we grew to like it and found it to be a perfect pairing with the “DAN-DAN Noodle” that came soon after.

You will also notice a set of instructions, teaching you “how to eat DAN-DAN Noodles”. Take photo within 20 seconds!? That is impossible! We joked and laughed, while we waited eagerly. Finally, our bowls were served to us!
もうひとつ、あまり他のお店では見慣れないものがありました。「

The DAN-DAN Noodle reminded us of “Mazesoba”, a type of noodle that has been gaining popularity in Singapore in recent years. While most Singaporeans are perhaps more familiar with Tonkotsu Ramen, shops are starting to introduce Mazesoba and people in Singapore have definitely taken a liking to it! Similar to Mazesoba, you mix all the goodness together and add condiments to your liking. There is usually a spicy version and in this case, you are able to select the level of spiciness and “Mala” level prior to ordering. The addition of Japapense pickles peaked my interest! Was rather sceptical but I grew to enjoy the entire bowl and finished it within minutes!

また、日本の漬け物が添えられていたのが個人的にとてもおもしろかったです。はじめて口にするものだったので、少しその味を疑っていましたが、予想以上においしくて全部ペロリと食べてしまいました。


The “DASHI Noodle” has a broth that is made from Kombu (Kelp) and other dried ingredients. It is said that this single bowl contains nearly 32 types of spices and a large assortment of ingredients, only known to their staff members! They are devoted to presenting the “authenticity of Japan’s culinary culture” and choose to only serve the highest quality of ingredients. As such, there is actually limited soup and ingredients and the shop closes once they are completed sold out (Psst, only around 100 bowls a day!)
「DASHI Noodle」は、昆布をベースにしたスープが特徴的なラーメン。
ひとつの器になんと32種類ものスパイスとそのほかたくさんの原料が使用されていおり、スタッフにしか共有されない秘伝のレシピとのこと。日本の伝統的な食文化を体現することにとても熱心に取り組んでいて、原料もこだわり抜いた最高の一品のみを使用しています。
そのためスープと原料がなくなったら閉店となります。その数、合計で一日約100食・・・。「せっかく来たのに閉店していた」なんて残念なことがないよう、早めの来店をおすすめします!
